Twinkie Surprise Cake Roll

It’s been a little over a year now since Twinkies made their comeback.  Since the historic comeback on July 15th, 2013, 500 million Twinkies have been baked and shipped, showing just how popular these little tasty treats are.

I wrote this review while participating in a campaign for Mom Central Consulting on behalf of Twinkies. I received samples and a promotional item to thank me for participating.

To celebrate, Hostess will be releasing a comeback edition of The Twinkies Cookbook in time for it’s 85th Anniversary.  (Keep your eye out for it!)  Feel free to submit your own Twinkie recipe by July 31st (yes, that is tomorrow!) for a chance to be featured in the cookbook.

I decided to celebrate by creating a recipe of my own using Twinkies.

Preheat the oven to 375 degrees.  Line a 15x10x1 baking sheet with parchment paper and spray with cooking spray.  In a large bowl, beat the eggs for 3-6 minutes until they are thick and lemon colored.  Add the sugar, water and vanilla, and beat for another minute until it is all well mixed.  Add the flour, baking powder and salt and beat until well combined.

Prepare a large, clean kitchen towel by sprinkling ¼ cup powdered sugar onto it.

Pour the batter into a prepared baking sheet and bake for 11-15 minutes until cake bounces back when you lightly press your finger onto it.

Immediately flip the cake on to the towel with powdered sugar.  Remove the parchment paper from the back and place a new sheet of parchment paper onto cake.

Roll the cake up gently and cool for an hour.  In a medium bowl, smash 3 twinkies and add 3 cups of slightly thawed whipped cream.  Blend until smooth and creamy.  After cake has cooled, gently unroll the towel and remove the parchment paper.  Spread filling inside the cake and reroll the cake without the towel.

Spread the whipped frosting onto sides and top of cake.

Pour the sprinkles into a pan and carefully roll cake onto sides and top around to coat with sprinkles.

And you will have a delicious, colorful treat to serve.  My kids (and husband and I) loved this!  The Twinkies and whipped cream mixed together as a filling was awesome.

Ingredients
Cake Roll
  • 3 eggs

  • 2 tsp vanilla

  • ½ cup sprinkles
  • powdered sugar (for dusting the towel)
Filling
  • 3 twinkies
  • 3 cups whipped cream - slightly thawed
Sprinkle Topping
  • whipped vanilla frosting (any brand)
  • 1 cup rainbow sprinkles

This has me inspired to go make a jelly roll style cake. They look so pretty! (I’ve actually never had a Twinkie.)

This looks awesome and sounds delicious! I’m not even sure that I like Twinkies that much but this sounds like something I would like. Thanks for sharing!
